Organic - This spice occurs most frequently in Indian cuisine, though it is also produced and widely used in the Middle East. It smells and tastes similar to thyme due to its high concentration of thymol. Try dry roasting and crushing it roughly before adding a little to risottos, root vegetable salads and winter soups.

Thymol has an antiseptic and antibacterial effect, and is often used with dishes containing pulses, beans and legumes and after rich meals as it can reduce flaulence.

Although it can be pungent and bitter when uncooked, its character softens when it has been dry roasted. Even so, a little will go a long way. Ajowan is commonly added to fish, lentils and beans, and can be added to curries.
