Fenugreek seeds are bitter when eaten uncooked. Before use, they should be lightly dry-roasted or cooked in hot oil before being ground. Uncooked seeds can be sprouted and added to salads. Try adding a few to the pan when you roast a joint of meat to give a nut character to the sauce.
